My dinner tonight was so yummy! And it was less than 400 calories. It may look like "just" a salad, but it left me satisfied and energized. Despite the fairly lite calories, this meal provides 13.3 g protein and a good does of vitamins and omega 3s.
In addition, it's super low on carbs. Low carb isn't an overall priority for me, but I'm trying to have the majority of my carbs earlier in the day - as per an article I read on how Jillian Michaels eats. The recipe is very simple:
* 4 cups of spinach salad mix [16 calories]
* 1/4 cup crumbled blue cheese [119]
* 1/4 cup coarse chopped walnuts [191]
* 3 tbsp lite balsamic vinaigrette dressing [68]
